Ingredients Fish Skewers with Ginger Kale & Polenta

  • 600g fish (barramundi, snapper, salmon)
  • fresh thyme or lemon thyme
  • 2 lemons
  • olive oil
  • salt and pepper
  • 250 g butter
  • 1 brown onion
  • 2 garlic cloves
  • 1 4cm piece fresh ginger
  • 1 tin crushed tomatoes
  • 1 bunch kale
  • 1 cup polenta
  • 500ml stock (veg, chicken or water is fine)

Ingredients for Apple & Blueberry Tarts

  • 500ml milk
  • 1 sheet shortcrust pastry
  • frozen blueberries
  • 1 apple
  • 1 egg
  • almond meal
  • rapadura sugar (caster sugar is also fine)

Equipment needed

  • Oven/stove top
  • 2 medium mixing bowls
  • 2 medium saucepans with lids
  • bbq/fryingpan or grill to cook skewers

  • chopping board

  • pastry brush
  • baking tray with baking paper
